Farina 0 tipo Manitoba by Grandi Molini Italiani is a strong flour with high stability, ideal for the production of biga preferments with long leavening times (18/20 hours) and for processing natural sourdough and “mother yeast”. It is therefore perfect for making breads such as ciabatta and other breads that require long fermentation times.
