Soffiate tipo 0 by Grandi Molini Italiani is a flour with high water absorption, excellent performance, good extensibility and versatility, ideal for long-leavened biga preferments (minimum 22 hours in the proofer, at least 18 hours at room temperature). Recommended for the production of light and fluffy bread, such as ciabatta bread, with a high water content (over 80%).
