Caramelized apple domes with plum jam

Ingredients for 8/10 tarts
300 g of Type 00 Organic Soft Wheat Flour
170 g of butter
100 g of sugar
250 g of plum jam
1 egg
1 pinch of salt
6 apples
3 tablespoons of sugar
 
Directions
First, prepare the dough. Form a fountain with the flour and, in the center, add the sugar, egg, butter cut into small pieces and salt. Start working with a fork, then finish by hand and quickly so as not to heat the ingredients. Form a ball, wrap it in plastic wrap and let it rest in the fridge for 1 hour.
Meanwhile, prepare the filling: peel the apples, cut them in two and cook them with 3 tablespoons of sugar in a non-stick pan, then let them cool once caramelized.
After the rest time has elapsed, remove the pasta from the fridge, roll it out and form round discs with the help of a pasta bowl. Grease the tart molds, line them with the pastry disc, roll out some plum jam and place the caramelized apple. At this point close the tart with a second disc of pastry, piercing it with a small knife before baking.
Bake in a ventilated oven at 170° for about 30 minutes and, once cooked, let it cool and sprinkle with icing sugar.
