Chocolate cookies

200 g Type 0 flour - Linea Origini
20 g potato starch
1 average-size egg
80 g granulated sugar
150 g light brown sugar
120 g butter
1/2 packet baking powder
150 g dark chocolate chips
50 g dark chocolate chips to decorate
Melt the butter in a double boiler. Make sure it has cooled before adding the sugar. Whisk thoroughly, then add the egg, flour, baking powder and corn starch.
Mix until the dough is smooth and tight. Lastly, add the chocolate chips.   

Place the dough in a bowl and rest it in the fridge for 3 hours. Form into small balls and arrange on a baking sheet lined with parchment paper. Lightly press each ball down, adding more chocolate chips on top. Bake in a 180° C preheated standard oven (fan off) for about 10 minutes.
