Savory waffles with fig honey, raw ham and goat cheese

Ingredients
For the dough (8 medium pieces)
180 g of Type 00 common wheat flour
190 g of fresh whole milk
80 g of melted butter
40 g of grated Parmigiano Reggiano
2 medium whole eggs
1 teaspoon of chemical yeast for quiches
1 pinch of salt
 
For the dressing
150 g of fresh goat cheese
8 slices of raw ham
8 fresh figs
Fig honey q.s.
 
Directions
Start by separating the egg whites from the yolks and pour the latter into a large bowl. Separately, beat the egg whites until stiff. In the bowl containing the egg yolks, add the Parmesan, milk and a pinch of salt, then add the flour and yeast, mix well and pour the melted butter slowly (keeping aside about 10 g). Mix until you get an homogeneous consistency.
At this point, stir in the egg whites a little at a time, mixing between one addition and another.
If you bake the waffles in the oven, grease the silicone mold with the leftover melted butter, distribute the dough leaving a few millimeters free from the edge and bake for 12/15 minutes at 190/200° in static mode.
If you use the waffle iron, follow the instructions given there: it will take about 4/5 minutes to cook.
Once ready, remove the waffles, let them cool and serve accompanied by a slice of raw ham, a quenelle of goat cheese, fresh figs and fig honey.
