Savoury Croissants

250 g VivAvena bread mix
130 g water, not cold
20 g butter, room temperature
10 g sugar
8 g salt
5 g baker’s yeast

For brushing:
1 yolk
flax seeds, poppy seeds and sesame seeds
Dissolve the yeast in water, then add the butter and sugar. Lastly, add the flour and salt and knead until smooth and silky. Transfer to a bowl, cover with a cloth and leave to rise for at least 3 hours. Once risen, roll out the dough in a circular shape about 1 cm thick. Cut into 8 wedges and roll up into croissants. Arrange them on a baking sheet lined with parchment paper and brush with egg yolk. Sprinkle with the seeds and leave to rise for at least 2 hours. Bake in a 180° standard oven (fan off) for about 15-20 minutes. Let cool slightly before serving.
